Meal Kits From Peapod Make Dinner Prep Simple

As a busy mom I am all about things that make my life easier. The time of day I really appreciate saving time the most is at dinner time because usually we are squeezing in a meal before or after a ball game or have just a bit of time in between activities on our busiest nights. I think this cookbook is perfect for both novice chefs like myself and more seasoned ones like my husband.

Fast Pho is Bittman’s “easy” recipe for pho that uses shortcuts and ingredients to shorten the traditionally lengthy process into one that gets dinner on the table in half an hour. Since Pho is a meal that I had never had before I didn’t realize this wasn’t an “authentic” pho recipe but I appreciated how simple it was to make. My husband, who has had pho before, was aware that this wasn’t a traditional pho recipe but enjoyed it just the same and was happy not to have to have it simmering on the stove for hours.
