At the end of summer when our tomato plant stops producing tomatoes we are left with some ripe and some partially ripe tomatoes. Normally with the green tomatoes we make fried green tomatoes. They taste so good but this season we’ve decided to try something new and bake the tomatoes. This is a much healthier choice and they taste so delicious! Here is how to make them:
1) In a bowl mix:
-A dollop of olive oil
-Seasonings (We used celery salt, garlic salt, pepper, onion powder, basil and parsley)
2) Cut tomatoes into wedges
3) Put tomatoes in the bowl and stir them gently until they are coated
4) Arrange the tomatoes on a cookie sheet
5) Cook the tomatoes at 350° for about 10-15 minutes
6) If there is any olive oil mixture left in the bowl you can brush it on the tomatoes

I’ve always avoided fried green tomatoes because of the frying part. But, this looks like a great way to get all the flavor with much less fat. Thanks for sharing.
